This month, Best Home Chef is looking at mid-week meals – by sharing your recipe, you can win one of 8 Women’s Weekly cookbook sets, each one chock-full of great cooking inspiration!

What makes a great mid-week meal?

The best mid-week meals share three great qualities:

They’re quick to make

In the middle of a working week, when you tend to be running short on time and energy, you need a dish that doesn’t take long to prepare.

By keeping the prep time down, you can spend less time cooking and more time relaxing and enjoying your meal.

They’re simple to prepare

Tricky or finicky recipes don’t make great mid-week meals, as the effort it takes to prepare them can leave you more drained than when you started.

Similarly, great mid-week meals make use of common, everyday ingredients that can be found in typical fridges and pantries.  After all, going out to the shops in search of that one special ingredient takes time; time you could be spending cooking and eating.

They’re nutritious to eat

“Quick and simple” doesn’t have to automatically mean “junk food”.

By keeping the ingredients and cooking techniques on the healthy side, you can give your body the energy it needs to power on through to the end of the week… which is a much better time to relax!

A few simple ideas:

  • Fancy sandwiches
  • Simple stir-fries
  • Perfect pasta
  • Soups, stews and casseroles
  • Special salads
