My name is Kerrod Pedley. I originally became interested in cooking while watching my mother at a young age however, my cooking has developed through the years. I traveled after I left school around Europe on a trip of a life time and focused greatly on cooking. I spent a fair amount of time in Italy learning to cook with the locals in Tuscany as well as learning a few tricks in France and Austria. I developed new culinary skills and learnt a great deal about bread making during this time. After I returned, I started work as the Manager of a small restaurant in Brisbane, T4's Gourmet Pizza House. Although I did not have any official certification, I was trained by the Owner and Chef, Andre. Cooking has become a great focus in my life and my lucky family get to test all the meals! I may not know every recipe in the book, but the fair few I do know I have perfected.
Aside from my old boss, Andre, my biggest culinary inspiration is Hugh Fearnly-Whittingstall. I attended a few workshops while I was in England at River Cottage HQ and since then I have taken on board his morals. I have always been a firm believer in growing my own vegetables as it gives the best possible quality and I always want to cook the best with my own ingredients. I have also adopted some butchery skills to enable me to butcher whole animals and thus save a great amount of money in the long run.
The purpose of making a profile on Best Home Chef, however, is to share what I have learnt and the recipes that I obtained while I was traveling, my time at the restaurant and throughout my life. I hope you all enjoy what I have to pass on.
