- 1 cup passata
- 150 g brown sugar
- 1/3 cup bbq sauce
- 1/3 cup tomato sauce
- 1/3 cup sweet chilli sauce
- 1/2 cup apple cider vinegar
- 1/2 cup kentucky bourbon
- 2 Tbls maple syrup
- 2 tspn dried mustard powder
For the marinade, mix together all the ingredients. Place ribs in a plastic container and cover with marinade and refrigerate overnight.
Preheat oven to 150C
Line your baking dishes with baking paper. Place your ribs in a single layer.
Reserve 3/4 cup of marinade. Place the reserved marinade into a small saucepan.
Bake ribs for 2 hrs. Basting every 30 min.
While ribs are cooking, place marinade on a medium heat and reduce to a thick sauce, this should take about 30 minutes
Finish your ribs on the char grill of your BBQ.
Turning your ribs and basting with reserved marinade until glazed, charred and sticky.
This will take about 15 minutes,
Slice ribs and serve hot, pour any reserved marinade over hot ribs.
If you don’t want to BBQ turn your oven up to 225C and continue as above.
I use the medium size foil trays you get from the supermarket. No washing up.
It makes life easier.
