  • 4 x medium-sized tomatoes
  • 50 g diced mushrooms
  • 100 g pork mince
  • 1 x minced garlic clove
  • 1 x chopped asian shallot
  • 1 Tbls fish sauce
  • 1 x sliced spring onion
  • 100 ml olive oil
  • 1 tspn tomato paste
  • 1 tspn sugar
  • 1 x sliced red chilli
  • 1 pinch salt
  • 1 pinch black pepper


Cut off the top on the tomatoes, scoop out the inside carefully without damaging them. Save the seeds and pulps in a bowl.

In another bowl, mix the mushrooms, mince, half the garlic, half the shallot, spring onion, salt and pepper and half the fish sauce. Mix well and stuff the tomatoes with the filling.

Heat half the oil in a saucepan. Add the rest of the garlic and shallot and fry for a few minutes. Add remaining fish sauce as well as tomato paste and sugar. Let it simmer for 5 minutes and set aside.

Fry the tomatoes in the remaining oil, stuffing-side down for 3 minutes. Turn over and fry for another 3 minutes. Add the sauce to pan and let simmer for a little bit. Plate the tomatoes, pour over the sauce and top with chillies and coriander!
