Aussie Prawn & Mango Cold Rolls

Ingredients
- 8 x vietnamese rice paper
- 100 g vermicelli
- 2 Tbls mayonnaise
- 16 x fresh, shelled, cooked and cooled prawns
- 1 x fresh mango, peeled and diced
- 0.5 cup grated cheese
Method
Prawn and mango cold rolls
Soak the rice paper sheets one a time. Fill with a small amount of vermicelli, a thinly sliced cheek of mango, chopped prawns, a sprinkle of cheese, a drizzle of mayonnaise and a pinch of parsley.
Roll up and enjoy.
