- 8 x vietnamese rice paper
- 150 g vermicelli
- 1 Tbls mayonnaise
- 16 x cooled, shelled and cooled prawns
- 1/2 cup cup grated cheese
- 1/4 cup chopped herbs
- 1 x fresh mango, peeled, stone removed, diced
Soak the rice paper sheets one a time.
Fill with a small amount of vermicelli, some diced mango, chopped prawns, a sprinkle of cheese, a drizzle of mayonnaise and a pinch of herbs.
Roll up and enjoy.

I was wondering what herbs you might have used. I came up with fresh coriander leaves, chili, basil, parsley and/or tarragon.
