Ingredients

  • 20 g butter(melted in saucepan)
  • 120 g fresh baby spinach leaves(chopped)
  • 1-2 clove garlic(crushed)
  • 375 g smooth light ricotta cheese
  • 1 pinch black pepper
  • 2 x pre - rolled puff pastry
  • 1 pinch salt

Method

1)In saucepan heat butter on medium heat,add spinach and garlic,stir and cook until spinach evaporate all water.Cool,chop and add in ricotta, season with pepper and salt and mix well.Taste and see,if anything need to be added.If you like it more garlic put more.

2)Thaw puff pastry room temperature,but not to much,cut into square each sheet and put on heated sandwich maker.Fill with ricotta cheese put on top of it another square of puff pastry,close the maker and bake until gold.

PS.This is very quick,cheap and really delicious.In summer time perfect lunch.
Serve as that or with vegetable salad.
