  • 3 x sheets flaky puff pastry
  • 6 x slices ham 400g diced (or bacon)
  • 2 x tomatoes
  • 12 x eggs
  • 3/4 cups milk


Heat oven 180C
Line 26 x 38cm dish with baking paper
Put pastry into tray, overlap where necessary. Keep excess pastry.
Sprinkle with diced ham or bacon
Remove core from tomatoes, squeeze out pips, slice, put on top ham
Break 11 eggs onto pie, keep one for mix
Mix remaining egg with milk, S n P, parsley and pour over pie
Cut excess pastry into triangles and place on top over egg yolks
Bake 25 – 30 minutes until set and brown
Remove from tray and place on cooling rack
Cut into manageable pieces and serve!
