- 10 x bigger potatoes
- 1/2 x red onion (finely chopped)
- 1 clove garlic(crushed)
- 100 - 150 g cheese chedar (grated )
- 1 x red capsicum (finely chopped )
- 1 x green capsicum, chopped
- 2-3 cups barbecue chicken ( finely chopped )
- 1 pinch salt
- 1 pinch black pepper
- 1 x egg (lightly beaten with fork )
1)Potatoes,brush and clean under running cold water,add into saucepan,cover with water,put the lid on and cook with skin on until tender.Cool down.
2)When potatoes cold cut them in half and spoon the middle out,keep that in a bowl after with fork mash that.
3)The chicken meat fry in frying pan on medium heat with little bit of oil(short time)add onion,and fry until soft,add capsicums,garlic and mashed potatoes.Season with salt and pepper.Cool down and then add into cold mixture the egg and mix well again.The halved potatoes cut little bit on bottom,because they will be not sit properly on baking tray.Fill each potato with the mixture,sprinkle with cheese and bake in preheated oven on 200 C until golden.
4)Serve on a plate with vegetable salad or gherkins.
