Ingredients

  • 1 x large eggplant
  • 3 x zucchinis, sliced
  • 5 x roma tomatoes, chopped
  • 1 x small brown onion, finely chopped
  • 425 g white beans
  • 2 x garlic cloves, crushed
  • 2 Tbls olive oil or spray
  • 1/4 cup parmesan cheese, finely grated
  • 8 tspn basil pesto
  • 1/2 x fresh red chilli, finely chopped
  • 1 bunch fresh basil leaves

Method

Pre-heat oven to 200 degrees

In a bowl, mix olive oil, chilli, half the garlic, salt & pepper

Slice the eggplant & zucchini into 1cm rounds & brush with oil mixture

Line a baking tray with baking paper and spray with olive oil spray

Place the eggplant & zucchini rounds on tray and place in oven for 15 – 20 mins or until slightly browned

Meanwhile, in a saucepan, brown the onion and the remaining garlic with olive oil until softened

Add the tomato, stir and reduce heat

Simmer for 10 minutes, season well

Add the beans and stir

Remove the vegetables from the oven when ready

On each dinner plate (serves 2), place one eggplant round, spoon a teaspoon of pesto, then 2 basil leaves, then a teaspoon of Parmesan, then one tablespoon of the bean mixtire, then 3 zucchini rouonds

Repeat

The final layer, after the zucchini rounds, top with the eban mixture again and then more Parmesan

Serve
