- 1 shot olive oil spray on to loaf tin
- 1 cup self - raising flour
- 1 cup plain flour
- 1/2 cup bran flakes - crushed
- 2/3 cups raw sugar
- 1/4 cup flaked coconut
- 1 tspn cinnamon - ground
- 3 x eggs - free range
- 2 x large - over ripe bananas
- 160 g unsalted, soft butter
- 2 tspn real vanilla essence
- 2 x large fresh peaches, sliced.
Preheat oven to 150°C. Spray a 7cm-deep loaf pan with oil spray. Line the base and sides with non-stick baking paper if you are skeptical that the tin is going to allow your loaf to come out, even with the oil spray.
Sift the combined flour into a large bowl. Add the sugar, coconut and cinnamon and bran flakes, combine.
Make a well in the centre. Add the eggs, banana, butter and vanilla. Stir until just combined. NB: if the mixture looks a little dry because some ripe banana are wetter than others, add just a drizzle of vegetable oil. Noone has ever said, “this cake/loaf is TOO moist!
Pour HALF into the prepared pan. line with sliced peaches. pout the rest of the mixture and pat down. if you have extra peaches, decorate the top.
Bake for 1 1/2 hours or until a skewer inserted into centre comes out clean. Set aside in pan for 20 minutes to cool before turning onto a wire rack to cool completely. NB: I check it every 30mins, to ensure I am on top of its baking, and i rotate it as my oven is less than perfect!
This is not a very sweet recipe. and I enjoyed it, toasted, with butter.
