  • 3 x eggs
  • 3/4 cups sugar
  • 1/4 cup oil
  • 1/4 cup milk
  • 1 cup flour
  • 3 Tbls cocoa
  • 1 Tbls vanilla sugar
  • 1 Tbls baking powder
  • 3 cups milk
  • 1 Tbls vanilla sugar
  • 1/2 cup sugar
  • 4 Tbls flour
  • 3 Tbls cornflour
  • 1 Tbls lemon rind finely grated
  • 2 x bananas peeled


For the cake:
1- Grease a round 20 cm dish and set the oven to 180 degrees.
2- Mix the eggs in a mixer on medium speed for 3-4 minutes. Add the 3/4 cup sugar and 1 tablespoon vanilla until creamy in texture. Add the oil and milk remain mixing.
3- Mix the flour, baking powder and cocoa in a bowl and add to the egg mixture mixing on low heat for another 2 minutes. Spread in the dish and cook in the oven for 30-40 minutes.

For the pudding:
1- For the pudding mix all the ingredients (milk, sugar, flour, cornflour and lemon rind) except the vanilla sugar.
2- Cook on low heat constantly stirring. Be careful it may thicken very quickly. Once it has thickened add the vanilla sugar and set aside to cool.

Assembling the cake:
Once the cake has cooked and cooled, you will need to cut out the centre like in the image and put aside the pieces of cake.
Add a full spoon of pudding in the centre of the cake, smooth it out. Add the bananas in the centre and cover with remaining pudding.

With the pieces of cake you put aside, it is a good idea to crumble and sprinkle on top of the pudding. Set aside for a few hours in the fridge and serve.
