Ingredients

  • 2 x very ripe bananas
  • 2 cups self - raising flour
  • 1 tspn bicarbonate soda
  • 1 tspn cinnamon
  • 1 cup brown sugar
  • 3/4 cups milk
  • 1/4 cup yogurt
  • 2 x eggs, whisked

Method

Preheat oven to moderate, oil 12 muffin tins with extra light olive oil spray.
Mash bananas and stir in all the wet ingredients and make sure well blended (lumps of banana are okay) then add the dry ingredients just to combine.
Spoon the mixture into the tins and cook for 15 – 20 minutes until puffed and golden.
Stand in tins for 5 minutes before turning out.
These are best eaten just warm from the oven.

    • he turned 10 in April! He is very supervised though lol, but the work is his own. We combine working on his literacy in with the cooking project he want to take on.
