- 2 x chicken breasts
- 4 x slices of black forest ham
- 3 x pieces of bocconcini cheese sliced
- 1 handful fresh basil leaves
- 4 x small whole red capsicums
- 2 x garlic cloves chopped
- 1/4 handful pine nuts
- 200 g green beans
- 4 x strings of twine
Preheat oven to 200°C fan-forced. Place whole red capsicums in an oven tray, sprinkle with olive oil and bake for 10 minutes at this temperature while preparing chicken parcels.
Cut chicken breasts lengthways so you have 4 x thin slices. Lay chicken breast on top of a slice of ham, layer 3-4 slices of bocconcini cheese along top of chicken breast followed by a layer of 3-4 basil leaves. Starting from one end, roll the ingredients to create a parcel & tie with twine to secure while baking. Repeat this process for the other 3 chicken breasts. Place the chicken parcels in an oven tray that has been sprinkled with olive oil, lower oven to 180°C fan-forced and bake for 15-20 minutes while continuing to bake the capsicum during this time.
Next heat olive oil in a pan on the stove and stir fry green beans & garlic on high heat for approximately 2-3 minutes, at this stage add pine nuts so they roast in the pan and continue cooking for 1-2 minutes, testing to ensure beans are still slightly firm but cooked through so tender.
Remove the inner core of each capsicum so it sits on the plate like a cup and place a chicken parcel on each capsicum remembering to remove the twine prior to serving with green beans. Sprinkle pine nuts over the dish as you wish. Enjoy!
