Ingredients

  • 2 x chicken thigh fillets
  • 1 cup basil leaves - for basil pesto paste
  • 1 x shallot, chopped - for basil pesto paste
  • 2 Tbls olive oil - for basil pesto paste
  • 1 Tbls roasted pine nuts - for basil pesto paste
  • 1 pinch salt & petter - for basil pesto paste
  • 1 Tbls salted roasted walnuts - for walnut feta topping
  • 1 Tbls goat feta - for walnut feta topping
  • 1 pinch oregano - for walnut feta topping
  • 1 tspn lemon thyme leaves - for garnish
  • 1 pinch red long chilli thinly sliced - for garnishing

Method

1 – use back of chef knife to tenderise chicken fillets. 1-2 min each fillet until it is soft and mince-like. this will break the fillet muscle and give it tender texture;
2 – put chopped walnuts, fetta cheese and oregano into a bowl, mix until paste;
2 – Make Pesto – put all Pesto incregients into processor, blend until chuncky paste;
3 – Use spoon to spread the pesto paste onto the chicken fillets, then use knife to fold the fillets into square pocket;
4 – Put the folded chicken fillets in plate to rest for 15min. Sprinkle startch over to absorb excessive juice;
5 – Put chicken on steamer for 10 min strong steaming until fillet is cooked; Position the fillets into serving plates, keep the remaining sauce in the steaming plate;
6 – Heat the remaining sauce from steaming plate in a small sauce pan, adding salt, pepper to taste, reduce to gravy texture. Pour the sauce over the chicken fillet;
7 – Spoon the walnut cheese mixture over to top of chicken fillet;
8 – decorate the dish with lemon thyme leaves and red chillie slice;
9 – serve with crispy toast slices – Serves two!

Notes:
It is almost impossible to make the basil pesto for right amount just for this dish. I often keep some home-made pesto in my fridge for later sandwiches, salad or pasta.

You can also use baby basil leaves (from the same bunch) for garnishing, which will give nice consistency. I would recommend some lemon zest for little uplifting if that is the case;

The meal style doesn’t have ‘Steam’ as option!
