Ingredients

  • 30 g glass noodles (bean vermicelli)
  • 4 Tbls fresh mint, finely chopped
  • 350 g lean pork mince
  • 4 x prawns, minced
  • 2 x shallots, grated
  • 1 clove garlic - grated
  • 3 Tbls fresh corriander, finely chopped
  • 3 tspn castor sugar
  • 2 Tbls fish sauce
  • 4 x cleaned squid bodies
  • 1 x juice of a fresh lime
  • 1 x mild red chili, finely sliced
  • 4 x strong toothpicks

Method

1) Soak noodles as per instructions on the packet, drain & chop roughly. Set aside the toothpicks
2) Heat the BBQ on medium
3) Once all ingredients have been chopped & prepared add everything into a large bowl – apart from the squid tubes
4) Mix everything together (best to use your hand) until well combined
5) Stuff the squid tubes with the mixture leaving around 2-3 cm at the top. Seal the tubes with a toothpick
6) Place the tubes on the BBQ plate or grill, cook for around 8 minutes on each side.
7) Remove from heat & slice into 3cm thick strips using a super sharp knife
Enjoy x
** Can also be cooked in a pan

  • This a great dish. You need to make sure the tubes are not too big as can take some time to get the stuffing cooked. I used big tubes and had to finish them in the oven for 10 minutes and it all worked very well. I served it with a spicy tomato sauce and it worked very well. Give it a go!!!!!
