  • 1 cup quinoa
  • 2 Tbls fresh lemon juice
  • 1 bunch coriander
  • 100 x light shredded cheese
  • 1 tspn chicken stock powder
  • 2-3 Tbls sweet chilli sauce
  • 2 x eggs
  • 100g g light shredded cheese
  • 2-3 Tbls green curry paste


Cook 1 cup of Quinoa (as per the packets instructions) with a teaspoon of chicken stock. Add lemon juice and leave in the fridge to cool.

When Quinoa has cooled –
You need 2 baking trays lined with baking paper and set your oven to 180 – 200°c (Fan forced)

In a large bowl place the cooked quinoa and add the following ingredients

1 bunch of chopped coriander
2-3 tbs sweet chilli sauce
x2 eggs
100g light shredded cheese
2-3 tbs of green curry paste

Mix all ingredients throughly.

Put some water in a bowl and wet your hands to form a ball (this will also help the patty to stick together), place this on the baking tray. Push the quinoa ball down lightly to form a patty).
* Optional – you can brush the top of each quinoa patty with a little oil.

Cook for 15 – 20 mins or until golden brown.
Makes 12 patties
