  • 500 g lean organic beef mince
  • 2 x eggs
  • 1 Tbls olive oil
  • 1 pinch salt
  • 3/4 cups bread crumbs
  • 2 cloves garlic, crushed
  • 1 punnet cherry tomatoes
  • 10-12 x fresh basil leaves
  • 1/2 cup plain flour
  • 150g x goat cheese chopped


Place beef mince, eggs, bread crumbs, garlic, 1 tablespoon of olive oil & salt in a mixing bowl and combine well with a wooden spoon. Spread plain flour over a clean cutting board and using a tablespoon measure scoop out the mince mixture, rolling into a ball covering lightly with the plain flour from the cutting board & repeating this process until all of the mince mixture is used. Heat olive oil that just covers the base of a pan and add the meatballs to brown. Remove from the heat immediately and transfer into a baking tray covering the meatballs with the cherry tomatoes, chopped goats cheese and fresh basil leaves. Bake in the oven at 180°C for approximately 30-35 minutes. Enjoy! :)
