Ingredients

  • 1 x (225gr) tin beetroot, drained
  • 1 Tbls vegan mayonnaise
  • 1 clove garlic, crushed
  • 1/2 tspn ground cumin
  • 1/2 tspn ground hungarian style sweet paprika
  • 1 sprig fresh mint (chopped)
  • 1/2 tspn salt
  • 1/2 tspn freshly ground black pepper

Method

• Process the beetroot, vegan mayonnaise, crushed garlic and extra virgin olive oil until smooth.
• Transfer into a small bowl.
• Add the cumin, sweet paprika, chopped mint and black pepper. Add salt to taste. Serve with crudités.

  • Oh I love beetroot! I actually eat it far to less … so this dip sounds great to have on a sandwich etc!
