Ingredients

  • 1.5 kg black mussels
  • 1 x large brown onion diced
  • 4 cloves garlic (chopped)
  • 2 x large red chillies diced
  • 1/2 x red capsicum diced
  • 3 x tomatoes diced
  • 1 x tomato paste 170g can
  • 1 x stubby of new (beer)
  • 2 cups chicken stock
  • 1 handful continental parsley - chopped

Method

In a large saucepan about 7 L is good

Put olive oil in pan heat up put onion in cook for a minute then put
garlic,chilli and capsicum cook for two minutes or until soft now put in tomatoes and paste cook for a minute put in beer simmer for a minute then put stock bring to the boil then in go the mussels
put a lid on keep moving pan to keep the mussels moving around in side pan cook for about 5 to 6 minutes or until mussels are open once cooked put parsley in mix through server in a big bowl with some crusty bread
Make sure to pour broth over mussels

  • tried this but still find shell in dishes off putting, perhaps more of an issue for me being pescaphobic, but my son who is very seafood centric also struggled with the idea of shells in his food. I know it’s traditional, but ….
    he enjoyed the meat and flavours though
