  • 8 x big tomatoes
  • 1 x small onion (chopped )
  • 1 x middle sized garlic clove - grated
  • 1 handful big basil leafes - fine sliced
  • 1/2 x lemon juice
  • 1 splash olive oil
  • 1/2 tspn black pepper
  • 1/2 tspn seasalt
  • 1 x ciabatta bread


Start to skin the tomatoes! To get rid of the skin, cut a little cross at the bottom of the tomatoes. Bring water to the boil and add the tomatoes – let them cook until the skin starts to peal a bit off. That should take not long, approx. 2-3 min.
Remove from the water and let them cool down a bit and take off the skin, half them, get out the seeds and liquid, cut in little cubes and add to a bowl. Chop the onion and add to the tomatoes – grate in the garlic into the tomatoes and also add the basil. Season with Salt and Pepper and a bit of lemon juice, olive oil and stir well.
Cool it for a couple of hours.
Slice the Ciabatta bread and spread on some olive oil and BBQ it on each side. Top with the tomatos and ENJOY !
