Burghul Salad

Ingredients
- 2 cups fine burghul
- 2 x tomatoes finely chopped
- 1 x cucumber finely chopped
- 2 x onions greated
- 1 Tbls tomato paste
- 1 Tbls pepper paste
- 1 bunch parsley, finely chopped
- 1 bunch mint, finely chopped
- 1 sprig dill, finely chopped
- 1 tspn black pepper
- 1 tspn paprika
- 2 Tbls oil
- 1 L boiled water
- 1 Tbls lemon juice
Method
1- Place the burghul in a large heat proof bowl and add the boiling water on top. You may not need all the water, pour only just enough to cover the burghul. Cover the burghul and set aside for about 2o minutes waiting for the burghul to absorb all the water.
2- In another saucepan saute the grated onion with the oil gradually adding the pepper and tomato paste. At this stage it is a good idea to add the lemon juice, paprika, black pepper and salt. Cook for another 5 minutes and set aside.
3- Combine the paste with the burghul ensuring you combine it properly.
4- Add all the remaining ingredients: Parsley, mint, dill, cucumber and tomatoes.
5- You can serve this as a salad or you can spoon the salad among cos lettuce leaves and roll.
Hint: You can serve this a little spicy by adding red pepper flakes.
