Ingredients

  • 200 g butter
  • 3/4 cups caster sugar
  • 3 tspn vanilla

Method

Olive oil spray
3 eggs
¼ cup fresh orange juice
¼ cup sour cream
1 2/3 cup self raising flour
¼ cup plain flour

Orange icing
60g butter, at room temperature
½ cup icing sugar, sifted
1 tsp finely grated orange rind
2 tsp fresh orange juice

Preheat oven to 180degrees, spray a round cake pan with oil and line with baking paper
Using an electric beater, beat the butter and sugar until pale and creamy. Add vanilla and beat until combined. Add the eggs, 1 at a time, beating well after each addition. Transfer to a large bowl
Use a large metal spoon to fold in orange juice, sour cream, and combined flour, in alternating batches, until just combined. Pour mixture into prepared pan and smooth the surface. Bake for 30-35minutes or until golden, or until a skewer comes out clean. Transfer to a wire rack and cool
To make the icing, beat the butter until soft and gradually add the icing sugar and beat until light and creamy. Add the orange rind and juice and beat until just combined
Spread the icing over the cake and serve
