Ingredients

  • 200 ml buttermilk
  • 200 ml double cream
  • 1 sprig after dinner mint leaf aka chocolate mint leaf
  • 6 x gelatine
  • 5 x kaffir lime
  • 1 x orange
  • 200 g caster sugar

Method

slowly bring to boil cream caster sugar and 1/3 butter milk remove from heat add 3 leaves gelatine let cool over ice bath , slowly bring kaffir lime juice to 80 degrees add remaining gelatine let cool over ice bath , caramelise 1 orange slice set aside ,pour cream mixture into ramikins sit on 45 degree angle sprinkle with alpine pepper let set pour half of kaffir lime mix on top of ramekin still on 90 degree angle place mint leaf on top let set then pour remainder lime mix on top standing upright let set place caremelised orange on top serve ith raspberry compote
