Ingredients

  • 3 x large spanish onions
  • 50 g salted butter
  • 2 Tbls brown sugar
  • 2 x sheets puff pastry
  • 1 x tub crumbled fetta
  • 1 x bottle of mazzetti balsamic glaze

Method

1. Preheat oven to 180 degrees and thaw frozen pastry
2. Melt butter in pan and then add sugar and stir until combined well (medium to high heat)
3. Chop onions in half and then slice (medium thickness)
4. Add onions into sugar mixture and stir occasionally until onions have softened and reduced into a jam like consistency
5. Slice pastry into rectangles. Can cut up to a maximum of 20 per sheet
6. Place pastry on baking sheet on oven tray and then add a teaspoon of onion mixture onto the middle of each pastry piece
7. Sprinkle some crumbled fetta on each of the onion mixture and then squirt a dollop of balsamic glaze
8. Place into oven for around 18-20 minutes or until pastry has puffed up and is golden brown
9. Tartlets are best served immediately whilst hot
10. Enjoy making this easy recipe….. It has a lovely sweet savoury combination and don’t be surprised if you get asked to make it again!!

MAKES 24 – 40 (depending on how many squares have been cut)
