- 1/2 x cauliflower when its a big one --- otherwise 1 small
- 1 x veggie stock cube (mussels)
- 1 knife tip x nutmeg
- 1/4 cup coconut cream
- 1 Tbls dairy free margarine (nuttelex)
- 1 splash water
- 1 tspn roasted onions for garnish
Separate the cauliflower, put into a pot, add water until very slightly covered, add the nutmeg and stock cube and bring to the boil for a couple of seconds. (You also can use Veggie Stock instead of water and veggie cube). Let it simmer until the cauliflower is soft — should take approx 10 min.
Purèe it until creamy when done — add the maragine and cocunut cream and season with salt and pepper. Stir well and let it rest for 10min before you serve it.
