Cauliflower with Eggs and Potatoes Gems

Ingredients

  • 1 x big head cauliflower
  • 8 - 10 L eggs(lightly beaten just with fork) )
  • 1 - 2 tspn salt(popcorn salt is much better)
  • 1 pinch black pepper
  • 4 x fresh green top of shallots )finely chopped
  • 1 x packet of potato gems
  • 3 Tbls oil
  • 150 g butter

Method

1)Wash the cauliflower under running cold water,separate into small pieces and cook in salty water approximately 10 minutes or until half cooked.Drain.

2)Heat oil and butter in deeper saucepan on medium heat and put cauliflower in.Season with salt and pepper,pour over eggs and stir.Cook until the eggs set up.

3)The potato gems cook according to packet instruction.

4)Serve on a plate and sprinkle with chopped shallots.

PS.This meal is very light,quick, cheap and kids love it.In summer time is perfect for dinner.

  • I am always happy to see no meat on a plate :-)
    And just a tip to replace the eggs — Besan flour is great for doing vegan omeletts — I bet this dish would also be great with it. Just a suggestion :-)

  • Oh but I lolve the egg and cauliflower idea. yum yum yum a bit less of those gems for me. Still if I ignore the gems, I love it!
