- 3 x eggplants
- 1 x red sweet chilli
- 1 bunch parsley, chopped
- 1 x onion (diced)
- 1 Tbls olive oil
- 1 Tbls vinegar
For this recipe you will need to cook the eggplants on a charcoal bbq, however you may cook the eggplants in the oven as well.
1- Cook the eggplants and sweet chilli directly on the charcoal bbq until soft and smokey. Place them in a bowl as they can release their juice and it can get messy.
2- Once the eggplants and sweet chilli are cool enough to handle, peel their skin and roughly chop them up and place in a bowl.
3- Add the parsley, onion, vinegar, oil and salt. Mix and serve.
