- 10-15 x mushrooms washed and stalks removed
- 1 cup feta cheese grated
- 1/2 x capsicum diced (small)
- 1-2 x spring onion chopped thin
- 1 Tbls olive oil
- 1 pinch salt
- 1 pinch black pepper
Preheat the oven to 180 degrees.
Place the mushrooms on a flat tray with their cavity sides facing up.
In a separate bowl mix the cheese, capsicum, spring onions, black pepper and salt.
Divide the mixture in the mushrooms filling them as much as you can.
Bake the mushrooms for 15 minutes in the oven
Optional: you may drizzle hollandaise sauce before serving or serve with sauce of your choice.
