- 200 g cheese(blue vien)
- 200 g smoked cheese
- 200 g gipsy bacon
- 500 g mushrooms with bigger head
- 1 x brown onion(finely chopped)
- 1 Tbls olive oil
- 1/2 x red capsicum, chopped
- 3/4 cups mozzarela cheese (shredded )
1)In pan heat oil,add onion and fry until onion is lightly brown,add chopped legs from mushrooms,stir and add both cheeses and bacon and cook….5 minutes.Taste and see,if anything need to be added.
2)With this mixture fill the head of mushrooms,put in each mushroom bit of capsicum and on top of it bit of mozzarella cheese and put in oven and bake…15 minutes at 180 C or until golden.

Known also as “mushrooms Rafaelo”, can be simplified:
version with blue cheese – just stuff with chopped onion and cheese, then bake
version with yellow cheese – just stuff with chorizo and cheese, then bake
vegetarian – just stuff with chopped onion and butter, then bake
Good accompaniment of dry red wine, usually served as antipasti / appetizer
PS: works best with size of mushrooms that can be eaten whole.
