  • 2 x brown onions, diced
  • 1 Tbls macadamia or olive oil
  • 1 tspn ground ginger
  • 1 tspn ground cumin
  • 1 tspn sweet paprika
  • 2 cups cooked chick peas
  • 1 cup crushed tomato
  • 200 g baby spinach


Heat oil and cook onions till soft. Add spices and stir on low heat till fragrant. Add tomato and 1 cup water, stir until combined. Take off heat and put through food processor. Add back to pan and combine with chick peas on medium heat. Stir and cook for 10 mins. Take off heat and stir through spinach.
Serve with rice!

Non Vegan: For those who are happy to eat yoghurt, I suggest adding a dollop of natural yoghurt when serving.
