- 500 g diced chicken
- 375 g tin of red kidney beans
- 1 tspn turmeric
- 2 Tbls tomato paste
- 1-2 Tbls vegeta
- 2 cups basmati rice
- 2 sprigs corriander
- 1 x onion
- 1 tspn chilli powder
Step1: Fry diced onion until slightly golden, then add diced chicken and fry til almost fully cooked. (10mins)
Step2: Now add turmeric, chilli powder, vegeta, tomato paste, kidney beans and some chopped corriander and 1 cup of water and simmer for 30-40 mins on a medium heat…check after 20mins as you may need to add extra water.
Step3: Cook rice, you can make any amount or use any rice really, just follow the instructions to what you have.
Step4: Serve on a bed of rice and fresh corriander.
