  • 2 x breast organic chicken
  • 1/2 x head white cabbage
  • 2 Tbls poppyseed
  • 4 x leaves, kaffir lime leaf
  • 1 cup head fennel
  • 1/2 cup olive oil
  • 1/4 cup white vinegar
  • 1 tspn caster sugar
  • 1/2 x clove smashed garlic


perfect for a girls lunch or part of a summer buffet.

poach gently the 2 chicken breasts in water with some salt. chill and slice really finely. in a jar put the olive oil, vinegar, sugar and garlic. close the lid and shake violently ( this will release the garlic oil in to the liquid and emulsify it at the same time). finely slice the fennel, cabbage, and lime leaf. mix together with the chicken and poppyseeds (finely chopped white onion and or chives is optional here) and the dressing.(leaving out the garlic). place in piles on the plate. serve with a sprig of parsley, poppyseeds, a lime leaf and lemon zest as well.
