Ingredients

  • 2 Tbls paprika
  • 2 tspn cayenne pepper
  • 1 tspn coriander powder
  • 1 tspn cumin powder
  • 1 x onion
  • 2 x red peppers
  • 2 x green peppers
  • 1 x coriander powder
  • 1 x cayenne pepper
  • 1 x red chili
  • 1 x green chili
  • 500 g lean beef mince
  • 2 x avacado
  • 1 bunch corriander
  • 1 x tomato
  • 1/2 x onion
  • 2 Tbls olive oil
  • 1 x lemon
  • 2 cups brown rice cooked
  • 1 tspn clove powder
  • 1 tspn vegetable stock

Method

Rice:
Rinse rice
boil in 4 cups of water with 1 teaspoon of clove powder + 1 teaspoon of veg stock

Chili:

- Heat Oil in a pan
- Add chopped onion, chilies, peppers, tomatoes
- Stir
- Add meat
- Stir
- Add Paprika, cayenne, coriander powder, cumin powder
- Stir
- Let the meat brown
- Add tinned toms + kidney beans
- Stir
- Cover the pan and let this bad boy simmer!

Guacamole:

Blend 1 tomato + 1 bunch of coriander + 2 avocado’s + half an onion into a rough mix. Add juice of one lemon and olive oil.

    PS does anyone really rinse their rice? I’ve never understood why.
