Ingredients

  • 2 x large mud crabs
  • 2 x vegi oil
  • 1 tspn ginger
  • 1 tspn tomato paste
  • 1 Tbls sugar
  • 2 Tbls soy sauce
  • 2 bunches coriander
  • 2 Tbls minced garlic
  • 200 ml tomato puree
  • 1 x finely diced chilli
  • 1 Tbls white vinegar
  • 1 bunch chopped shallots

Method

1. Clean and chop crab into 4 pieces
2. Heat oil in wok. Add crabs and stir fry until nearly cooked.
3. Add rest of ingredients except for the shallots and simmer stirring frequently until cooked through. Stir through shallots.
4. Serve with rice
5. Plenty of napkins and a good bottle of white wine
