- 5 x eggs
- 1 1/2 cup caster sugar
- 1/2 cup cocoa powder
- 1 1/3 cup plain flour
- 300 ml thickened cream
- 250 g chocolate chips
- 1 x olive oil spray for greasing the form
Preheat oven to 180 ° C. Using an electric mixer beat the eggs in a bowl until pale in colour and doubled in volume (approx. 7minutes). While whisking gradually add the sugar. Stop beating and fold in the cocoa powder and flour.
Pour cake mixture into greased 25cm springform cake pan. Bake for 20 minutes or until a skewer pulls clean from the middle of the cake.
Turn over the form and leave to cool. Prepare Cream: Melt the chocolate chips in microwave and combine with cream. Cool completely and then beat with an electric mixer until light and fluffy. Add some sugar to taste if required.
When the cake is cool, slice it into 3 even horizontal layers. Place the first layer of the cake on serving plate and spread with 1/3 of the cream. Then place the second layer of the cake on top and spread another 1/3 of the cream over it. And then, place third layer of the cake, lightly press and spread the remaining cream on top. Decorate.
