Ingredients

  • 60 g unsalted butter
  • 3/4 cups sugar
  • 1 x egg
  • 1 tspn quality vanilla extract
  • 1/2 cup self - raising flour
  • 1/2 cup plain flour
  • 1 pinch salt
  • 1 cup dessicated coconut
  • 3/4 cups milk
  • 3/4 cups rich dark sugar
  • 1 Tbls butter
  • 1 Tbls best quality cocoa
  • 1 & 3/4 cup boiling water

Method

Please note: last four ingredients are for sauce.

Using an electric mixer, cream butter and sugar until fluffy. Beat in egg and vanilla.

Combine coconut with sifted flours and salt, fold into creamed mixture alternately with milk. Spoon into greased, round 1.5 or 2 litre ovenproof dish. To make sauce: combine rich dark sugar, butter and sifted cocoa in a bowl. Pour boiling water over, stir to dissolve.Pour sauce over batter mixture. Bake in moderate conventional oven approx 45-50 minutes (or fan-forced approx 30 minutes) until a skewer inserted in the centre comes out clean.
