Chocolate Olive Oil Cake

Ingredients
- 125 ml ml boiling water
- 2 tspn vanilla extract
- 50 g cocoa
- 200 g caster sugar
- 150 ml olive oil
- 3 x eggs
- 150 g almond meal
- 1/2 tspn bi carb
Method
Pre heat oven 170 degrees
Mix, sifted cocoa, boiling water and vanilla together and set aside
Combine almond meal, bicarb and salt and set aside
Combine caster sugar, olive oil and eggs and whisk at medium speed for 3 minutes until pale and fluffy, fold in dry mix and then wet mix
Place in a 23cm spring form tin and bake at 170 degrees for 40-45 minutes, check with skewer, it should be a bit sticky
Remove and set aside for ten minutes in tin and then lift out and serve with strawberries and a good dollop of freshly whipped cream

This sounds interesting! I will give that a go with cia seeds instead of the eggs … will see if that works too. Thanks for the recipe
