  • 1 cup cous cous
  • 1 tspn garlic powder
  • 1 tspn ground cummin
  • 1 cup fresh sliced spring onion
  • 1/2 cup walnuts - grated
  • 1 x zucchini, grated
  • 1 x carrot, grated
  • 2-3 tspn mixed seasonel multi use sprinkle
  • 1 tspn ground paprika
  • 1 tspn ground cummin
  • 1 tspn ground coriander
  • 1 cup fresh parsley - chopped
  • 1-3 splash sunflower oil to fry
  • 1 x lemon for garnish


Get started with the Cous Cous. I stuffed 4 mushrooms with approx 10cm/diameter. Cook the Cous Cous like advertised on the package. I used 1 cup and added to the water also 1/2 tsp of Garlic powder, 1/2 tsp ground Cummin, 1/2 tsp smoked Paprika powder, some salt and a splash of Sunflower oil.

Slice 2 stalks of spring onion and grate in your food processor half a cup of walnuts. Heat some Sunflower oil in a pan and start to fry the spring onions. Stir well and add the walnuts.

Add 1 grated carrot and 1 grated Zucchini …

… add also the Cous Cous and 2-3 tsp of Seasonal spice mix, 1 tsp sweet paprika powder, 1 tsp ground coriander, 1 tsp ground cummin, salt. The spice mix I used I bought at Coles — but you can any other middle eastern spice mix you like — but check the ingredients, some maroccan spice mixes contain milk substances.

Now add a good amount of fresh chopped Parsley — have a good stir and have a taste. If you think its ok …

… start to stuff the mushrooms with the cous cous mix. Also heat the oven to 170C°.
Top the stuffing with whatever vegan cheese you like — I used my homemade Feta cheese and the oil of it — When ready, put the mushrooms into the oven until the mushrooms are done — should take not longer than 30min!
