  • 6 x organic hens eggs
  • 1/2 cup fresh cooked crab meat
  • 1/2 cup good mayonnaise
  • 2 pinches salt and pepper
  • 10 x slices the freshest white bread thick sliced


the yummiest sandwich ever.
boil the eggs and separate the yolks to the whites. smash separately. fold gently all ingredients with salt and pepper to taste. lay out the bread and place even amounts on top. put the another slice on and cut the crusts off gently then cut again to make 2 finger sandwiches. garnish with micro cress. serves 2 sandwiches each for 5 people. (hint: i get the bakery to cut a whole loaf lengthways to get 5 single sandwiches off the plank shaped sandwich. 2 1/2 long sandwiches each loaf. making approx 12 single sandwiches. especially great for parties and holidays. can just be egg or just crab, ham or smoked salmon as well for lunches and afternoon teas.)
serve with a gorgeous summer flower or mixed cress or parsley.
