Ingredients

  • 250 ml water
  • 125 ml oil
  • 1 cup flour
  • 4 x eggs
  • 1/4 tspn salt
  • 1 L milk
  • 10 Tbls sugar
  • 8 Tbls flour
  • 4 x egg yolks
  • 300 ml thickened cream
  • 1 Tbls vanilla extract

Method

Beautiful and elegant French speciality.

Puffs dough
In a saucepan, bring water, oil and salt to a boil. Add flour and stir on medium heat, until a ball forms and all ingredients get together.

Dough will come away from the sides of the pan.

Remove from the heat and beat the dough with el. mixer to cool it down and release steam. Add eggs, one at a time and vigorously stir with wooden spoon (1-2 minutes) after each egg. Dough mixture will get shiny, a bit tick but still smooth in texture.

Turn oven to 230° C and place baking paper into baking pan. Set pan aside.

Use piping bag (or 2 tea spoons) and make small ‘balls’ (12-15 balls) into prepared pan, balls to be 5 cm apart from each other.

It’s important to form higher balls, rather than wide ones (size of golf ball).

Place pan in oven and do not open it during the first 15 minutes of baking (otherwise dough will ‘sit down’ and spread around, instead to grow high).

After 10-12 minutes of baking turn T to 200 C, still do not open oven and continue baking for another 20-25 minutes, until puffs are golden-amber in colour. They will get hollow and dry inside.

Remove from oven and make few holes (use toothpicks) in each puff, to release steam, for puffs to remain dry and high. Let it cool down before filling.

Before filling, cut puffs horizontally, make cut closer to the top, approximately 1/3 of puffs height will be lid (top part shorter than bottom one) and 2/3 of height will be a base where cream is going to ‘sit’.

Vanilla Cream

In saucepan bring to boil 800 ml of milk.

Beat egg yolks and sugar with el. mixer, add flour and mix until ingredients get together. Add 200 ml of milk, whisk it and add to boiling milk.

Whisk eggs and milk until cooked (2-3 minutes) and let it cool down.

In separate bowl, using el. mixer, mix thickened cream and add into a cooled vanilla cream, whisk it well and fill the cream into puffs.

Decorate with icing sugar, melted chocolate, caramel, etc.
