  • 1 Tbls oil
  • 1 clove garlic
  • 1 tspn curry powder
  • 1 tspn cumin
  • 1 L water
  • 2-3 x chicken stock cubes
  • 1 x leek
  • 400 ml canned coconut milk
  • 1 Tbls corn flour
  • 1 tspn fish sauce
  • 1 x red capsicum
  • 4 sprigs spring onion
  • 1 Tbls lime juice
  • 1 Tbls coriander
  • 1 Tbls water(additional)
  • 1 sprig lemongrass
  • 500 g chicken, breast or thigh


Heat oil in pan, add sliced leek and crushed garlic, cook stirring until leek softens . Add curry powder, cumin and chopped coriander , cook stirring.Add the chicken and keep stirring until the chicken is just brown. Add water, stock cubes, lemon grass and coconut milk. Bring to the boil and simmer uncovered for 15-20 minutes. Add the cornflour to the extra water then stir in soup , add the fish sauce and keep stirring until soup starts to boil and thicken. Scoop out the lemongrass . Add capsicum, spring onions, coriander and the lime juice to the soup. Then it’s ready to serve with your choice of bread or crunchy roll. Yum!!
