- 1 x baby red snapper
- 1 bunch coriander
- 1 x small iceberg lettuce
- 1 bunch spring onion
- 2 cloves garlic
- 1/2 cup oyster sauce
- 1/2 cup soy sauce
- 1/4 cup sesame oil
- 1 x root ginger

Build a bed with the coriander with the coriander still on the sprig. The sprig contains a lot of flavour! Add iceberg lettuce, chopped spring onion and garlic.
Cut some nice long slits into the fish which will allow the sauce to penetrate the fish. For extra flavour you can place some garlic and ginger within the slits.
Place the fish on the bed and pour over some soy sauce for the salty part of the dish. Make sure to get into the slits. Also add a bit of oyster sauce for a bit of extra flavour.
Place into the oven for about 10mins at 100C as a guide, each fish will cook differently so check the fish regularly.
