Duck Breast with Orange & Port Reduction, Caramelised Apples

Ingredients
- 4 x duck breasts
- 1 bunch baby beetroot
- 1 x granny smith apple
- 2 dozen x green beans
- 1 bunch thyme
- 2 x carrots (roughly chopped)
- 1 x onion (roughly chopped)
- 200 ml port
- 2 x oranges
Method
1. Combine carrots, onion, port, juice and zest of orange in a sauce pan and bring to the boil. Cool then marinade duck, preferably overnight or as long as possible.
