  • 4 x duck breasts
  • 1 bunch baby beetroot
  • 1 x granny smith apple
  • 2 dozen x green beans
  • 1 bunch thyme
  • 2 x carrots (roughly chopped)
  • 1 x onion (roughly chopped)
  • 200 ml port
  • 2 x oranges


1. Combine carrots, onion, port, juice and zest of orange in a sauce pan and bring to the boil. Cool then marinade duck, preferably overnight or as long as possible.
