Ingredients
- 2 x ducks' breast
- 1 x onion
- 3 cloves garlic
- 1 x tomato
- 1/2 x red capsicum
- 250 g broccoli
- 100 g wheat germ
- 1 cup couscous
- 1 x pears
- 1 sprig rosemary
- 2 Tbls olive oil
- 3 Tbls pomegrante sauce
- 1 tspn italian herb
- 1/2 tspn salt and black pepper
- 1 x lemon or lime
Method
1- place the duck in the hot pan till its well fried and turn into golden color ( don’t add any extra oil)
2- girdle the onion, place it in the oven pan and pour the olive oil on it
3- preheat the oven about 10 minutes with 170 degree C
4- place the oven pan in the oven for 20-30 minutes till it get caramelized
5- take the extra oil out of duck and place them on the top of onions
6- season it by salt, black pepper, smashed garlic, rosemary, italian herbs and Pomegranate sauce and put the girdled red capsicum on top of it
7- place it in the oven for 30-45 minutes
8- boil half cup of water and mix it up with couscous
9- cut the pear to small pieces and add it to couscous and leave it for 10 minutes
10- after 10 minutes add salt, pepper and a table spoon of olive oil to the couscous
11- in the last 10 minutes cut the tomato to 6 pieces and put it in small oven pan, place it in one level lower in oven
12- make a salad with broccoli and wheat germ and garnish it by lemon or lime juice
13- while everything is ready set them in a nice dish and serve it hot
This food is very good for special occasion and takes 1h:30 mins to prepare. Enjoy
