- 4 x eggs
- 1 cup caster sugar
- 1 cup plain flour
- 2-3 x apples (granny smith)
Clean, core and cut the apples into small pieces. Set aside. Preheat oven to 180°C. (The oven should be well warmed up.) Using an electric mixer, whisk the eggs until pale in color and doubled in volume (approx 7 -10 min). While whisking gradually add the sugar. (Do not pour all sugar at the same time -the cake will not rise and this will adversely affect the taste). The mixture must increase in volume. Stop beating. Add flour and mix gently with a wooden spoon. Stir in a circular motion from the bottom up until flour is completely mixed in.
Spoon half of the cake mixture into prepared cake tin. Top with apples pieces (if desired sprinkle with cinnamon).
Spoon remaining mixture over apple pieces and smooth surface.
Bake cake for 30 minutes or until cake is cooked through.
Turn out onto wire rack to cool and then sprinkle with icing sugar.
