- 4 x eggs
- 2 Tbls flour (any flour would do)
- 1/4 cup water ( or as needed)
- 2 x medium potatoes
- 1 x small can of tuna/salmon (about 100g)
- 1 x onion, chopped
- 2 cloves garlic (chopped)
- 1 handful diced leek
- 1 cup grated cheese of your choice
- 1/2 cup carrot, grated
- 1 pinch of salt and pepper or to taste
- 1 Tbls butter
Makes 2 serves
Cook potatoes in Microwave for about 4 minutes until soft. Peel the skin off and cut in to small pieces or roughly break using a spoon. Put the potatoes in a mixing bowl and mix in tuna, salt, paper (feel free to use chili/coriander powder if u have them). Heat some butter in a saucepan and throw in garlic, onion, leek, Carrots. Let it sauté until you get the nice aroma and then add the potato tuna mix and stir until well combined and take off the stove and set aside.
Mix 4 eggs, 2 tablespoons of flour in a bowl and whisk until mixed add bit of water if mixture is too thick. Heat a greased non-stick pan over medium heat and pour half of egg mixture. Let it cook with lid on for about a minute. The bottom should be done but the top should be still wobbly but not runny. Take it off the pan and place on a baking tray. Repeat with the rest of the mix and make another.
Top each egg base with savory mix above, sprinkle with grated cheese and gill for 3 minutes (or 5 minutes in a 200 C oven) until cheese is melted and the top is golden brown.
Serve with a quick salad and crackers if you have time.
