Ingredients

  • 2 cups walnuts
  • 1 cup dates
  • 1/2 cup dried coconut
  • 1/4 cup ginger, grated
  • 2 cups cashews (soaked and drained)
  • 1 x whole lemon (remove skin and seeds)
  • 3/4 cups agave syrup
  • 3/4 cups coconut oil
  • 1 x banana
  • 1/2 tspn vanilla essence
  • 1 punnet strawberries
  • 2 tspn coconut syrup or honey

Method

Make it with a food processor. No cooking. Ingredients:

Base:
2 cups of Walnuts
1 cup dates
1/2 grated coconut
1/4 cup grated ginger

Process until it looks like biscuit crumbs. Press into springform pan.

Filling:
2 cups of soaked cashews
1 whole lemon (remove skin and seeds)
1/2 – 3/4 cup agave syrup
3/4 cup coconut oil
1 banana
1/2 tsp pure Vanilla essence

Process until smooth. Pour into base. Set in fridge for 4 hours.

Topping:
Sliced strawberries
Coconut syrup (or honey)

Drizzle a sweet syrup, like coconut syrup, agave nectar or honey over the top. Decorate the top with sliced strawberry or some other fruit.

  • Thank you for posting the recipe. I made a couple of changes because I didn’t have the necessary ingredients at home, but the result is still delicious. I used raisins instead of dates, maple syrup instead of agave syrup and honey, olive oil instead of coconut oil. I added a bit of rhum, too :) yummy

    • Hi Anom, I am surprised you could make this using olive oil. Really, it needs coconut oil to set. How did you get it to hold?

  • Made this tonight. We all loved it! I thought the lemon would be overpowering but it was perfect! And I didn’t grate the ginger. I keep mine in the freezer so I just threw a couple chunks in the food processor. Will definitely make again!
