Ingredients
- 1.2 kg grass-fed rump
- 1 x salt
- 1 x pepper
- 4 cloves garlic
Method
Roasts aren’t usually made from rump, but when you find a lovely piece of grass-fed rump it can be one of the most delectable dishes to share with friends. We actually used the rump from one of our 1.5 year-old steers who have been brought up on our farm – this is a very simple recipe, that showcases the meat as the hero of the dish.
1. Cut up the onions and garlic, and lay on the bottom of a roasting tray.
2. Rub salt and pepper on the top of the rump, before placing it on top of the bed of onions and garlic.
3. Bake on 180 degrees for around 50 minutes. Let the meat sit for 10 minutes, wrapped in foil, before carving.
4. serve with potatoes, greens and mustard.
