- 2 x puff pastry sheets, thawed
- 1 x eggplant, sliced or diced
- 2 x tomatoes sliced
- 100 g mozzarella cheese, sliced
- 1/4 bunch basil leaves
- 2 pinches salt & pepper
- 1 x egg (optional, just for brushing the surface
Preheat the oven to 180°C. Cut each puff pastry sheet into 4 squares. Place slice of eggplant in the center of each square, season with salt and pepper. Then place tomato, cheese and basil leaf on top of eggplant.
Make the parcels, pinching edges together to seal. Place parcels on a baking tray lined with baking paper. Brush with beaten egg and bake until golden. We like them warm.
